The only real difference between the two is the hardware your instance uses, but when selecting a dedicated host, it provides greater control over the physical host than a shared host would provide. In other words, you could request a large M4 dedicated instance, and you may receive an instance exactly the same size as an M4 large, but when you reboot the instance, it may be rebalanced onto new hardware. Overloaded RAM can cause instances to be placed on different or the same hardware.

Whereas with a dedicated host, you pay for the hardware much the same way you would for a leased server, but you know exactly what the hardware is. You can run instances on the hardware as you wish. It will always run on the dedicated hardware that you have outlined if you decide to run one instance on it.
